Some of the best coffees in Colombia come from the Huila region. The coffees in this blend come from Hobo, Rivera, Aipe and Neiva, which are all located in the Rio Baché basin. Coffee is carefully hand-collected at its peak moment of ripeness, gathered, brought in from the field, weighed and then the post-collection process begins. At each participating farm’s wet-mill, the cherry is first de-pulped and fermented in tanks for a period of 60 hours. The coffee is washed and finally dried on raised beds for 30 days
