This coffee was picked at peak ripeness then processed using a unique double fermentation technique. Coffee cherry is first left in bags for 40 hours, then it is depulped, placed back into bags and left to fement for an additional 36 hours. The beans are then washed and set to dry on a marquesina, a covered structure resembling a greenhouse, for 12 days.
